Roasted carob powder is manufactured from the cut, sifted, and cleaned pods (with seeds removed) of the Ceratonia silliqua tree. The pods are resifted, roasted, and grounded to a very fine powder that is light tan to dark brown in colour. It has a sweet taste and a typical carob/chocolate aroma.
This product can be used as a low fat, dairy and caffeine-free replacement for cocoa powder. Substitute cocoa powder in baking with equal quantities of roasted carob powder. Sugar should be reduced by 1/4, since carob is naturally sweeter than cocoa.
